Spit roasted citrus chicken

Looking for an easy but very suculent spit roasted chicken? Then look no further. i have an awesome recipe for a marinate that makes chicken very juicy and tender.  For best results, use an all natural chicken or Organic chicken.

To start, you will need:
  • Zest from one Lemon
  • Zest from one Orange
  • 1/2 fresh lemon juice
  • 1/2 cup fresh Orange juice
  • 3 cloves garlic diced
  • 1/2 to 1 teaspoon ground sage. Use 1 tablespoon fresh if you want
  • 1/2 to 1 teaspoon dried thyme leaves. Use 1 tablespoon fresh if you want
  • 1 teaspoon salt
  • 1/2 to 1 teaspoon ground black pepper
Place chicken in a bag and pour marinate over it. Seal the bag and marinate for 4 hours, turning every two hours to coat the meat. before placing on rotisserie, inject the bird with a mixture of lemon and ornage juice. This is of course optional BUT recomended since it gives it a very tasty flavor. Stuff the cavity of the bird with Orange quarters and lemon halves.Cook either in a rotisserie oven or on a wood fired spit.
