Roasted chicken with lemon herb butter

If you really want to impress the ladies, then follow this recipe and your smitten for a good night! You cant go wrong with a slow roasted chicken placed on a bed of wild rice, covered in a smooth lemon herb butter sauce. Serve this with a nice spring mix salad and she will love you long time!!

The first thing to do is decide HOW you want to roast the chicken. You can either slow roast it (250*F) or smoke it on a smoker. The smoker is always fun BUT use very little smoke. I have found that the smoke and lemon dont tend to mix well. You can always follow my Oven Roasted Chicken recipe and go from there.
Once you have cooked the rice and chicken, its time to make the sauce. Follow the recipe below and use about a 1/4 a cup or so to cover the chicken.
1/3 cup melted butter
1/3 cup sugar
1/4 cup heavy cream or half and half
1 TBLS lime juice (add to taste. i just use low amounts so it doesnt overpower the butter)
1 TBLS lemon juice(add to taste. i just use low amounts so it doesnt overpower the butter)
1/2 – 1 tsp favorite herb such as parsley or herbs de province.
1-2 artichoke hearts diced or chopped that have been cleaned and sauteed in oil or butter.
mix this all in a sauce pan and cook over medium heat for 2-3 minutes. Pour over hot roasted chicken and fresh rice.
